- Prepare 22 of fresh lalapenos.
- It's 6 ounces of extra sharp cheddar cheese, cut into cubes.
- Prepare 6 of thin slices of bacon, cut in half, and pre-cooked iust until limp and starting to cook.

- PRE ROAST JALAPNOS.
- Preheat oven to 450. Place jalapenos on foil lined baking dish and roast until just tender, abbout 5 to 10 minutes. Don't over cook they should still be firm enough to hold their shape. Cool make a slit on one end and carefully remove seeds.
- Fill peppers with cheese cubes to fit in.
- Wrap in bacon, secure with toothpick and place them on a foil lined baking pan. Have the oven preheated at 400 and roast until bacon is crisp and cheese is melted about 15 to 20 minutes.
- Serve with ranch or blue cheese dip or just sour cream mixed with some fresh chopped chives.
